Vegan Dish: Soba Noodles with Swiss Chard Recipe~

   
 Choosing to eat a plant based diet, has given me the opportunity to explore new foods, to discover some interesting recipes and try them out. Even though, most of my dishes are salads, which I love, I also like to experiment with foods I’ve never eaten before. Like Soba.

     What is Soba?  Soba are Japanese thin noodles made of at least 30% buckwheat. Since buckwheat has a tendency not to adhere closely, the noodles also include regular wheat flower. They look very much like spaghetti noodles except they are a light brown in color. They are quite popular in Japan and gaining popularity in many other places. They also form the basis for many traditional Japanese dishes.



If you have a Asian Market near by, you can get Soba Noodles there or order some online.

What you will need...

1 1/2 bundle soba noodles
4 tablespoon olive oil
1 tablespoon sesame oil
3 tablespoons soy sauce
2 tablespoons vinegar
1 tablespoon sesame seeds
1/2 tablespoon Korean red pepper flakes
Chopped green onions
Cumcumbers
Swiss Chard

Directions

Cook soba according to package instructions. 
Drain water and rinse in cold water until cooled. 
Add the olive oil and sesame oil to the noodles and stir well.
Make sauce by combining the soy sauce, vinegar, sesame seeds, and red pepper flakes. 
Chop up your onions
cucumbers small pieces
and chard as you see fit.
Pour the sauce to the noodles and stir well until the noodles are coated with the sauce evenly.
Serves about 2-3

Plant Based Juicing Recipe Family of 5 (2)




This juice recipe will fill
 2, two Gallon containers
You will need:
2 Oranges
2 containers of Blueberries
2 containers of Strawberries
2 Stocks of Kale
1 Large Carrot
(best served cold)
This juice recipe is so good, it’s sweet and tangy, just what your tongue craves.
I think the blue berries are what make this juice so sweet.

I cannot wait till the summer; I want to do a lemon, watermelon, strawberry juice, for starters…

2 My Health A Plant Based Diet




 Since I have been on this Plant Based, I have been doing a lot of research and  I came across this information , according to the CDC more than 75% of the $2.6 trillion in annual US health care costs are from chronic diseases. Diets high in meat and dairy are some of the main causes of most of these diseases.
·        Chronic diseases cause 7 in 10 deaths each year in the United States.

  About 133 million Americans—nearly 1 in 2 adults—live with at least one chronic illness.
More than 75% of health care costs are due to chronic conditions.
And it is worst in the Black Community.
My people are dying at an alarming rate: due to heart disease, strokes, cancer and diabetes.
What the old folks use to call “the suga.”



With those numbers and facts, why aren't more people on a plant based diet? 
Are people not connecting the dots? Or just don't care about their health?
Humans are committing suicide at a snail's pace...

Did you know that the first sign to heart disease is DEATH.
Seriously...


 It  is interesting to me that as I scroll down my face book time line, I often see photos of steak dinners cooked or at some restaurant  Or statuses saying I want to go to such, and such steak house.
I've seen several post from people who say they are on some type of diet; but eat Mickey D’s Oatmeal, most mornings…
Either they have ignored the information about McDonald’s Oatmeal, or they don’t give a rats’ ass. 
But I digress.
One misconception about a plant based diet is that all one is eating is sticks and carrots all day. 
There are an ass of recipes out there...check out Recipe.com, Youtube, go to the freaking library, most of my information came from there.  Another excuse is: it’s too expensive or time consuming…so is waiting in the E.R. Or having to fill another doctor’s prescription; because of high blood pressure or high cholesterol, both are just the beginning signs of many chronic ailments.

Oh! And where are you getting your protein?
 The same place a cow does.  Eating plants! 


I eat like a Gorilla.


It has been drilled into our heads "that humans need meat and dairy to survive" and it’s one of the biggest lies ever told! 
Humans are getting cancer and heart disease from eating animals and drinking their bodily fluids.
But I digress.

Plant Based Diet Juicing Recipes




Juicing is not rocket science, and you can get pretty creative when it comes to mixing up your favorite fruits and veggies. 

Not all the juices I've made, I like. 

However, I also know that if you are just starting your juicing feast; it can be a bit intimidating,
so from time to time I will share my favorite recipes with you.




~~Sock-it-to-me-Strawberry Pear Orange & Pineapple Juice~~
12-15 Strawberries
2 pears
1 Pineapple peeled and cut
2 oranges...
(I used Pineapple Oranges)
2 carrots



My next favorite is:

~~~Grape Ape Apple Juice~~~

3 Granny Smith Apples
1 cup of Seedless Grapes
1 lemon
a small slice of fresh Ginger Root

The Blacker the Berry...Plant Based Diet


In an interview Mike Tyson said he wishes was born a vegan.
 Not until I decided to change my eating habits and that of my family. That I truly appreciate and understand that statement.

Choosing a plant based diet is one of the best things I could have done for me and my family. 
What I am learning about this chapter in my life is that, it forcing me to read labels, and prepare meals differently.
It’s a challenge that I think many of us, are afraid to do. 
And many are not making enough time
In preparing our family meals, we would rather have it already chopped, cut up and seasoned.


In the past few years,
 I’ve notice in the produce department, chopped onions, precut celery and other foods that takes not more than 5 minutes to do.


And why are there fat poor people, and why are prisoners that are doing hard time 
I.E. death row inmates or long termers, more than 20 years, are dying from the same diseases found on the outside:
 Among prisoner deaths from 2001 to 2010, cancer and heart disease together accounted for about half of all illness-related deaths…

We are spending a lot of time sitting and not moving…
we sit behind computers, we are sitting in our cars commuting back and forward to work,
school, and activities…
Most of the walking most people are doing is from the parking lot to their car. Our life style does not match the food intact most people consume and that is why so many are unhealthy, and  dying.
But I digress....

Purple Potatoes...

"The blacker the berry the sweeter the juice."

That's a statement I've heard more than once in my life.
And there is a lot of truth to it!
Through my research I've discovered that
most of the darker plants are filled with the most 
anti-everything...

Here are some interesting  facts about Purple Potatoes:
Blue or purple varieties have an additional benefit in that they contain more and higher levels of flavonoids. 
Flavonoids are compounds which are found in the color pigments of fruits and vegetables. They provide us with antioxidant protection against chronic disease.
 In one study the University of Oslo in Norway found blue potatoes to have more than double the level of antioxidant rich flavonoids than either white fleshed or sweet potatoes. One of the many flavonoids found in blue or purple colored potatoes are anthocyanins. The interest and research into anthocyanins has been growing in recent years. They are anti-inflammatory, antimicrobial and anti-cancer. They also help neutralize damaging free radicals and may reduce the risk of heart disease.
 Although blue potatoes are a good source of anthocyanins, the most abundant source of anthocyanins in the western diet is strawberries, blueberries, grapes and red wine.

Purple Carrots


Purple carrots are even higher in antioxidants than orange carrots, and they also possess anti-inflammatory properties. This could make them very useful in the treatment of arthritis. They have been found to be antiviral, antiseptic and antimicrobial, and they also contain anticarcinogens and betacarotenes. They also contain phytochemicals including carotenoids, polyacetylenes, isocoumarins, phenolics and sesquiterpenes. Phytochemicals have antioxidant, anti-bacterial, and other disease preventative and health enhancing properties...
